History
The Lemon Squash is a non-alcoholic cocktail which is always made with lemon juice, sugar, sparkling water and some fruit for decoration. It is a very thirst-quenching drink, ideal in summer.
For the record, the recipe for Lemon Squash was published under that name for the first time in a cocktail book in 1884 in "American and Other Drinks" by Charlie Paul, a bartender who worked in New York, Paris and Royal Aquarium, London. Similar recipes had nevertheless already been published under other names a few years before.
