In the world of bubbles, we know Champagne, Crémant, Prosecco... but a newcomer (or rather, an old one that's back in force) is bringing sparkle to the glasses of natural wine lovers: Pet' Nat', short for Pétillant Naturel. But what exactly is a Pet' Nat'? Where does it come from? And why is it so popular? We'll explain everything.
What is Pet' Nat'?
Pet’ Nat’ is a sparkling wine that stands out for its artisanal and ancestral production method. Unlike Champagnes and Crémants, which undergo a second fermentation in the bottle with the addition of sugar and yeast (the famous traditional method), Pet’ Nat’ ferments only once, and this directly in the bottle.
Concretely:
- The winemaker bottles the wine while alcoholic fermentation is still underway.
- Fermentation continues in the bottle, which naturally produces carbon dioxide.
- The result: a lovely effervescence, often sweeter and freer than that of Champagne.
It’s raw from the tank, raw from the bubble, raw from the pleasure!
5 Cocktails revisited at Pet' Nat'

1. Spritz
Ingredients:
- 6 cl of Pet' Nat'
- 4 cl of Aperol
- A splash of sparkling water
- Ice cubes
- An orange slice
Preparation: In a large glass filled with ice cubes, pour the Aperol and sparkling wine, then top up with a splash of sparkling water. Stir gently. Add a slice of orange.

2. Mojito
Ingredients:
- 5 cl Cuban rum
- 2 cl lime juice
- 5 cl Pet' Nat'
- 2 cl cane sugar syrup
- Fresh mint leaves
- 4 or 5 lime wedges
- Crushed ice
Preparation: Directly in a glass, muddle the mint with the sugar syrup and lime juice. Add the lime wedges, crushed ice, rum, and natural sparkling white wine, then stir.

3. Bellini
Ingredients:
- 4 cl white peach purée
- 8 cl Pet' Nat'
Preparation: Pour the peach purée into a flute, then gently stir in the sparkling wine. Stir very gently to maintain the bubbles.

4. Mimosa
Ingredients:
- 6 cl of Pet' Nat'
- 6 cl of freshly squeezed orange juice
Preparation: In a chilled champagne flute, first pour the orange juice, then top up with the sparkling wine. Serve immediately.

5. Sparkling Kir
Ingredients:
- 2 cl crème de cassis
- 10 cl Pet' Nat'
Preparation: Pour the crème de cassis into a flute or wine glass, then gently add the sparkling wine. Do not stir; serve chilled.
