Clover Club: a cocktail that has come back to life after decades of neglect.

Recipe

For 1 person
4 cl gin
2 cl lemon juice
1 cl grenadine syrup
1 egg white

How to make

Technique: shaker / Glass: martini / Type: short drink (7cl) / Time: 4 mn
  1. Shake the gin, lemon juice, grenadine syrup and egg white.

  2. Strain into a martini glass.

  3. Optionally decorate with a few raspberries on a wooden pick placed on the edge of the glass.

History

The Clover Club cocktail is said to have been created around 1911, it bears the name of a Philadelphia men's club made up of businessmen, lawyers and journalists. They used to gather in the Bellevue-Stratford hotel, it is here that a young bartender Ambrose Burnside Lincoln Hoffman would have invented the cocktail around 1880.

In 1934 a magazine listed this cocktail as one of the 12 worst cocktails of the decade, and by 1950 the cocktail was just a distant memory.

Recently, a restaurant was built in Brooklyn called "Clover Club" and resuscitated this good old cocktail to make it one of their flagship cocktails. At the time this text is written, the recipe for the Clover Club cocktail is made in this restaurant with additional dry vermouth.
