The Pimm's Cup traces its origins to the 1820s, when James Pimm, a London restaurateur and bar owner, created the first version of the cocktail. Pimm owned a London establishment called The Oyster Bar and served his customers an innovative drink: a gin-based aperitif, flavored with a blend of herbs and spices. The drink, which he called Pimm's No. 1, was touted as a cure for digestive upsets and a health tonic, a popular idea at the time.
Initially, Pimm's No. 1 was served in small batches in shot glasses, but it wasn't long before it became the basis for more complex cocktails. As the drink's popularity grew, Pimm created more versions of his aperitif, adding liqueurs made from whiskey, rum, brandy, and even vodka. However, it was the gin-based version, Pimm's No. 1, that became the most popular.
