1 cl simple syrup
14 cl Champagne
5 to 7 mint leaves

In a glass, start by crushing the mint leaves with the simple syrup.

Add the Champagne.

Stir with a mixing spoon.

Decorate with a sprig of mint.
History
The Champagne Julep is a variant of the famous Mint Julep, it first appeared in 1882 in "Bartender's Manual" by Harry Johnson's. In accordance with Harry Johnson's instructions in his book and very logically, there is no crushed ice in a Champagne Julep unlike other juleps.
