Recipe

For 1 person
7 cl port wine
1.5 cl lemon juice
1.5 cl simple syrup
5 cl boiling water
Grated nutmeg

How to make

  1. Pour the simple syrup directly into the glass then the port wine.

  2. Grate a little lemon skin in the glass.

  3. Complete with strained lemon juice then boiling water.

  4. Sprinkle with grated nutmeg.

The Port Wine Negus was invented in the 18th century, a time when hot wine drinks were popular in Britain, particularly to warm the body during the harsh winters. The exact origins of the recipe are unclear, but it is believed to have been created by Henry Negus, a British nobleman, hence the cocktail’s name. The Negus was a variation on another popular hot punch of the time, often made with wine, sugar, lemon and spices, a drink that was both comforting and energizing.
