History

The Pussyfoot cocktail (sometimes written Pussy Foot) is a non-alcoholic cocktail with egg yolk, a detail that could put off more than one but wrongly...

This cocktail was created in the 1920s by Robert Vermeire of the "Embassy Club" in London, it is in the publication "Cocktails: how to mix them" of 1922 of which it is the author that we find the recipe for pussyfoot.

It is also in this publication that we learn that this cocktail was named in tribute to "Pussyfoot" Johnson, the "world champion of abstentionists" to use the same terms. Indeed, William Eugene Johnson (1862-1945) was an American lawyer and law enforcement officer who wanted to ban all intoxicating liquor.

The recipe for pussyfoots has evolved a lot, since originally Robert Vermeire made this cocktail with the juice of a lemon, the juice of an orange, a dash of apricot syrup, 3 sprigs of mint and a small egg white, all beaten in a shaker.
