Bishop is a drink that dates back to at least the 18th century, a time when wine cocktails were very popular in Europe and the American colonies. Its name may come from the deep red color of the mixture, reminiscent of the hue of the robes worn by bishops.
At that time, drinks made with mulled wine and spices were commonly served for their warming and medicinal properties. Bishop, often made with Bordeaux or Madeira wine, was a more sophisticated alternative to classic punches and was enjoyed in English and American drawing rooms.
